
Once again, Heritage Portfolio have been cosseting guests in style at the annual Military Tattoo at Edinburgh Castle. It’s the second year we have managed the VIP hospitality at this world-famous event, and despite this being the rainiest Tattoo on record, our guests (up to 144 a night over 25 performances) have been snug in the exclusive covered stand, complete with luxurious blankets and Pommery champagne.
The Tattoo now boasts superb new ‘back stage’ facilities including commercial kitchens, so for corporate and VIP guests (who to date have included generals, rear-admirals and an Oscar winner) the standard of service and cuisine is higher than ever. Among the canapés served are some suitably Scottish delicacies, as befits the setting, including bijou Haggis Balls and Arbroath Cullen Skink Tarts as well as dainty Beef Wellingtons – all made using locally sourced ingredients.
It all goes to show that challenging weather conditions and the most daunting of guest lists is just water (literally) off a duck’s back for our stalwart and professional-in-the-face-of-anything staff.
