The Champagne Academy Annual Scottish Dinner

Last week we had the pleasure of hosting The Champagne Academy’s annual Scottish dinner at Mansfield Traquair in Edinburgh for over 100 guests.

As part of the Champagne Academy, the 16 Champagne Houses take it in turn annually to host a dinner with perfectly paired Champagne. This year was the turn of Tattinger Champagne House, who we worked alongside to create the most magical backdrop at Mansfield Traquair.

The team at Heritage Portfolio created a unique and mesmerising event at Mansfield Traquair befitting of the Champagne Academy Dinner. Going beyond the norms is what we are known for, and we were very excited to design and deliver extraordinary culinary concoctions to pair perfectly with the selected Champagnes for the evening.

Paul Hood, our Executive Chef, and Frans Mortengren, our company wine ambassador and Champagne academician worked together to create the ultimate menu:

Watermelon with sea bass tartare and lime compressed honeydew melon and chili oil.

paired with Ruinart Blanc de Blancs NV

Confit salmon, fennel puree, pickled cucumber, radish and caviar.

paired with Comtes de Champagne Blanc de Blancs Brut 2007

Roast fillet of pork, pressed belly, cauliflower puree, pickled cabbage, carrot, smoked apricot jus.

paired with Prélude Grands Crus NV

Anster, rosemary and raspberry gastrique, nutmeg porridge oat cracker, bee pollen and bramley apple whipped crowdie.

paired with Bollinger Rose NV
