Delivering Excellence at the 2025 Genesis Scottish Open
Delivering Excellence at the 2025 Genesis Scottish Open
In July 2025, Heritage Portfolio proudly delivered premium hospitality and catering for the prestigious Genesis Scottish Open. Marking the beginning of a three-year contract with the DP World Tour, our first year was a resounding success – showcasing our capabilities at scale while elevating the guest experience with unforgettable culinary moments.
Hospitality at Scale - Delivered to Perfection
Over the course of the tournament week, we delivered more than 5,000 hospitality covers across a range of premium spaces including the Genesis Lounge, Partners Pavilion, and Green on 18. Our remit also covered DP World Tour operating areas, with full-service catering for:
- Players & Caddies Café
- Media Centre
- Greenkeepers
- Partners Chalets
- Media & Event Team Dining
- 7th Hole Grab & Go
- Caddies Dining
These high-volume services were managed seamlessly by our experienced operational team, which included over 50 chefs, managers, and front-of-house professionals, supported by 120 locally recruited staff.
A Culinary Collaboration with World-Class Chefs
Culinary innovation took centre stage in the Genesis Lounge, where menus were created in partnership with Michelin-starred Scottish chef Tom Kitchin and award-winning South Korean chef Mun Kim. Their collaboration offered guests a unique fusion of Scottish produce and Korean flavours – featuring standout dishes such as:
- Hand-dived Orkney scallops
- North Berwick lobster
- Black Angus beef with Korean miso mushroom sauce
- Rice pudding with Korean Fuji apples
Executive Head Chef Paul Hood, with 23 years’ experience in luxury dining, led the Heritage Portfolio culinary team. He was joined by Stephen Frost, Divisional Executive Chef and recent recipient of the Lifetime Achievement Award at the Scottish Excellence Awards, for his outstanding 52-year career.
Sustainable, Local, and Impactful
In alignment with the DP World Tour’s “Green Drive” sustainability initiative, our food sourcing focused on local and seasonal suppliers, including:
- Fish and seafood from George Campbell & Sons
- Beef from John Gilmour Butchers, East Lothian
- Fresh berries from Fife and Angus
We also embraced our commitment to social responsibility:
- Donated surplus food to local foodbanks
- Recruited locally, supporting employment in East Lothian
- Partnered with Social Bite, welcoming Yusuf and Shirzai to our team through their Jobs First programme – both of whom helped deliver player café services during the week

Behind the Scenes: Precision and Passion
Planning for the Genesis Scottish Open began in February 2025, with on-site operations beginning on 29 June. Our team ensured all outlets were ready and fully operational ahead of championship play from 10–13 July. Across the event, our ability to adapt to last-minute additions and deliver to the highest standard under pressure demonstrated the resilience, precision, and professionalism of every individual involved.
