An Enchanted Evening in Liverpool: A Celebration of Culinary Collaboration

In February, the Heritage Portfolio private events team travelled to Liverpool for a very special occasion - an exciting opportunity to collaborate on the annual charity dinner for the Marina Dalglish Appeal.

Invited to support the evening’s catering, our team was proud to work alongside Michelin-starred chef Tom Kitchin, who created the menu for the event. With a longstanding professional relationship and a shared commitment to quality, it was a privilege to support Tom and his team in delivering his vision for 300 guests.

Our role focused on the seamless execution of the menu, ensuring every dish was delivered with precision, consistency and care at scale.

The menu itself celebrated the finest seasonal Scottish produce, moving from elegant canapés through to a refined multi-course dinner and a light, vibrant dessert. Each course required careful coordination across our kitchen and front-of-house teams, with a strong emphasis on timing, presentation and consistency for every guest.

Delivering a dinner of this scale demanded detailed planning, close collaboration and a highly skilled team - all working together to ensure a smooth and memorable dining experience.

Throughout the evening, our focus remained on excellence at every stage. Collaborating with leading chefs and contributing to events that support meaningful causes reflects the very best of what we do.

 

From Kitchen to Marquee

This collaboration went far beyond menu creation. In the lead-up to the event, the Heritage Portfolio culinary team travelled to The Kitchin to work alongside Tom and his brigade - learning the intricacies of each dish and refining every detail.

Chef Kitchin worked closely with the team throughout, coordinating and liaising to develop the menu, train the chefs, and ensure flawless execution on the day. This hands-on partnership resulted in a seamless delivery, where every plate reflected the same level of care, creativity and technical excellence.

 

Delivering Excellence, Together

Behind the scenes, the evening was a true team effort. From the journey to Liverpool through to the final moments of service, success relied on close collaboration and a shared focus on delivery.

Operationally, the event was led on the ground by Frans (front of house) and Anna (kitchen), whose expertise, leadership and energy ensured a smooth and professional service throughout. They were supported by the Heritage Portfolio private events team, with Emma J and Emma C providing oversight and coordination across the event.

Working alongside Marina and Lauren Dalglish, our role was to support their vision through exceptional catering. By delivering a seamless dining experience for 300 guests, we were proud to contribute to an evening that reflected both the scale and significance of the occasion.

 

A Night to Remember

Above all, the evening embodied the very best of Scottish hospitality - offering guests not only exceptional food, but a true sense of occasion. With creativity, theatre and flair woven throughout, the event delivered a genuine “wow factor” from beginning to end.

Most importantly, it was all in support of a meaningful cause - raising vital funds and awareness and demonstrating the power of collaboration in creating something truly special.
