Café philosophy

Creating ‘an experience beyond food’ – one of our mantras - is at the heart of all the cafés we’ve set up in historic buildings and visitor attractions around Scotland.

What makes our cafés extra-special is our dedication to quality: it’s where we get pernickety about the perfect scone, meticulous about mini macaroons and excited about ultra-sophisticated sandwiches and colourful, imaginative zingy salads packed with locally-sourced ingredients treated with a touch of Ottolenghi-inspired magic.

The café teams live and breathe our philosophy of ‘from scratch’ kitchens – all our baking is done on site and we spurn pre-prepared bought-in fare. Some of our cafes have their own kitchen gardens and we use herbs, leaves, fruit and veg from these lovingly-tended plots whenever we can. Food miles = zero!

As a testament to our chic interiors and instinctive hospitality, these café spaces are increasingly in demand for evening hire – we’ve catered weddings, parties, dinners and private views at a number of our destinations – just ask for details.
